Budget-Friendly Recipe: Smashed White Bean, Basil, & Avocado Sandwich

I don’t know if it was the same for you, but this week was a long one! I was busy, but I kept thinking that the current day was tomorrow… Friday took forever to come. PLUS! here where I am, it’s a long weekend!! YOOHOO! 🙂

IMG_3454In the hunt for finding a recipe last week that is healthy, time-saving and budget-friendly, I found this perfect recipe for when you’re in a crunch and don’t have time to cook. Plus, it’s easy to make and it’s delicious!

Since I let my husband made the grocery list last week, I didn’t do it the way they said so I will have to try it again with the proper ingredients.

I shouldn’t leave him this task as we always end up missing something or we get the wrong things. 🙂

Regardless, even if it was a little bit mushy, it was still delicious.

All you need for this recipe is:

  • 1 heaped tablespoon whole grain dijon mustard
  • salt and pepper to taste
  • 1 15 oz can white beans, drained and rinsed
  • 1 avocado, sliced
  • juice of half a lemon
  • 2 tablespoons fresh basil leaves, finely chopped
  • for the sandwich (optional): baby spinach, romaine, arugula, tomato slices

We used premade dijon mustard instead of the whole grain, added a bit more basil and used navy beans. The way I made it, you could probably use it as a chunky dip! Yum!

If I had to change anything to this recipe, not that it needs it, I would probably add a tad of garlic to add a bit more flavor. I will have to try this next time.

I think this recipe is limitless.
